Strawberry Milkshake & Strawberry Cupcake with Monk Fruit Sweetener

🍓 Strawberry Milkshake Recipe

Ingredients (serves 2):

  • 1 cup fresh strawberries, hulled
  • 1 cup milk (dairy or plant-based)
  • 1 tsp Vivid Nutrition Organic Monk Fruit Sweetener
  • 1 scoop vanilla ice cream (optional)
  • Ice cubes as desired

Instructions:

  1. Blend strawberries, milk, and Monk Fruit Sweetener until smooth.
  2. Add ice cubes and ice cream (if using), then blend again.
  3. Pour into glasses, top with a fresh strawberry slice, and enjoy immediately!

Ingredients (makes 6-8 cupcakes):

  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 2 tsp Vivid Nutrition Organic Monk Fruit Sweetener
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • ½ cup fresh strawberries, chopped

Instructions:

  1. Preheat oven to 180°C (350°F) and line a cupcake tray.
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and Monk Fruit Sweetener until fluffy. Add eggs one at a time.
  4. Mix in milk and vanilla. Gradually fold in the dry ingredients.
  5. Gently fold in chopped strawberries.
  6. Fill cupcake liners ⅔ full and bake for 18–20 minutes.
  7. Let cool, then top with whipped cream or cream cheese frosting and a fresh strawberry slice.
